Avaa Verjus is the regional and sustainable answer to lemon and lime juice. Verjus is the juice of young, not quite ripe grapes. Milder than lemon, not as tart as vinegar, verjus is a universal genius! The taste of fresh grapes, the low sugar content and a specific acid mixture make it an absolute premium ingredient in the kitchen and at the bar. Unlike commercial verjus, Avaa is not made sour by the artificial addition of ascorbic acid. Thanks to its balanced and natural seasoning, this jack-of-all-trades can be used wherever a fresh, fruity acidity is desired. It goes wonderfully with sauces, dressings and marinades and is also delicious in cocktails or as a lemonade with sparkling water.
The story of Avaa Verjus begins in Berlin. Arnd Henning Heißen, bar luminary and good friend of Avaa founders Benjamin, Edward & Jakob, often complained that it was so difficult for him to get hold of good Verjus for his drinks. At the time, the three of them were still thinking "Who-Jus"? Then they threw themselves into the matter. Together with Arnd, the three guys from Avaa Verjus then worked for over a year on the perfect and above all natural Verjus recipe. In close coordination with the grape producer and now also good friends, the Kaltenthaler family, they select the grape varieties and the harvest time precisely in order to achieve the most complex result possible in taste and smell.
