This Chai Dao chef's knife, inspired by Chinese cuisine, fits perfectly in the hand when preparing various dishes. Its round shape also makes it perfect for use as a chopping knife. Güde created this unique series in collaboration with star chef Harald Rüssel, whose gourmet restaurant is located in the Mosel-Saar-Ruwer wine-growing region. The old oak wood of the barrel oak handle is obtained from the wood of 80-year-old wine barrels and is very hard-wearing and extremely stable due to the long ageing of the wood. The hand-forged 16 cm blade made of chrome-vanadium-molybdenum knife steel is made in one piece in over 40 manual operations, is stainless, ice-hardened and hand-sharpened.
The knife manufacturer Güde stands for hand-forged knives of the highest quality and only produces them in small numbers. Since 1910 and now in its fourth generation, the Güde manufactory has been practising the ancient art of knife making that has established the good reputation of the town of Solingen. At Güde, the knives are forged and ground from one piece of steel, fitted with the high-quality handles and honed by hand - so they have always been among the highest-quality Solingen products.
