Black walnuts are a real delicacy and the speciality from the Königskind gourmet manufactory. The so-called black walnuts are not a separate variety of walnuts, but candied green, i.e. unripe, nuts. Until shortly before St. John's Day in June, the green walnuts are still quite soft. Picked this early, the nuts can be pierced with wooden skewers and then bathed in water that changes daily for several weeks. When the nuts are completely black, they are transferred from the water bath to warm sugar syrup, in which they also ripen for several weeks. The "black pearls" go wonderfully with game, cold roasts, cheese or desserts.
Königskind is Uwe König's small gourmet manufactory in the Oberberg region. What began in 2005 as a hobby in the kitchen at home became an official project of the heart in 2014. From the untreated fruits of local nature, delicacies are made by hand in the small manufactory that have already been forgotten by many. Fruit spreads, mustard, chutney and co. are produced completely without flavourings, colourings, preservatives and flavour enhancers.
